Diner: Meat Loaf


Making meat loaf can be as simple as making a mound of chopped meat and baking it. This one is a tasty, with a few extra ingredients. Although it is often made in a loaf pan, it really works just as well if shaped into a loaf and baked, which makes it easier to serve.


  • 1 lbs ground beef
  • 1 lb ground veal
  • 1 lb ground pork
  • 1 t Salt
  • 1/2 t Pepper
  • 1 cup bread crumbs
  • 1/2 t oregano
  • 1 medium onion
  • 3 cloves garlic
  • 3 eggs
  • 1/2 cup parsley


Chop a medium onion and add to a mixing bowl .
Add the ground meat to the bowl. Mix.
Add the 1 C bread crumbs to the bowl.
Beat a single egg and add it to the bowl.
Add a clove of crushed garlic. Mix all the ingredients well.
Put a sheet of aluminum foil on a baking sheet and spray it with some olive oil. Mold the meat mixture into a loaf about four inches wide, two inches tall. Bake in an oven for about 30 minutes at 400 degrees F or until done.
Serve the Meat Loaf (over slices of white bread, if you are aiming for traditional diner fare) topped with our mushroom gravy.
