Diner: String Beans

Typical diner string beans are boiled to death. This update produces healthier, crisper beans that have a subtle citrus flavor.

  • 1 lb. String beans
  • 1 C Orange Juice

Put a steamer in a pot. Fill the pot with enough 1 C Orange Juice plus enough water to just reach the holes on the bottom of the steamer. Put the beans on the steamer.
Bring the Orange Juice to a boil.
Turn the heat to low, and cover. Steam for 5 minutes or until the beans are cooked to the desired level.
The String Beans will have a slight citrus flavor.
