Chopped Turkish Salad

Introduction

A fast salad with a Turkish flavor...

This simple salad is a refreshing change from leafy salads. The fresh parsley gives the the salad a "you're not from around here" taste that announces the dish as being from Turkey and the lower Mediterranean.

Ingredients

  • 2 large tomatoes
  • 1 mild onion
  • 1 Yellow Pepper
  • 1 Red Pepper
  • 1 Green Pepper
  • 1 Cucumber
  • 1 bunch Flat Parley
  • Olive Oil
  • 1 Lemon
  • Salt and Pepper

Directions

Cut up the tomatoes into 1/2 inch pieces. Add to the salad bowl.

Chop the peppers

Seed Yellow, Red & Green Peppers. Rip them into 1 inch pieces. Add to the salad bowl.

Wash and then chop the cucumber into half inch pieces. Add to the bowl.

Clean and chop the parsley. Add to the bowl, tossing.

Put the juice of the lemon over the salad.

Pour on 2-3 T Olive Oil. Salt and pepper to taste.
