A Mediterranean standard...
Versions of this shrimp with feta cheese casa role can be found in many cuisines of the Mediterranean. As a teen, I first had this dish in Istanbul a dockside restaurant, after a day of shopping at the covered bazaar. It is a fast and easy meal, particularly if you use pre-peeled and deveined shrimp.
Ingredients
- 6 cloves of Garlic
- 1 Yellow Onion
- 1 bunch Parsley
- 1 small can Anchovies
- 1 lb. cleaned, peeled, and deveined Shrimp
- 1/2 lb. Feta Cheese
Peel 5 cloves of garlic.
Chop the garlic.
Chop a yellow onion.
Chop a bunch of flat parsley.
Chop a small can of anchovies; about 8 fillets.
Heat 2 - 3 T in a frying pan. Saute the garlic and onion.
Add the following to the pan:
- Chopped anchovies
- Chopped parley
Stir for a minute.
Add a can of whole Italian tomatoes and coarsely chop in the pan.
Allow the sauce to simmer over a medium heat for 10-15 minutes.
Now, add the peeled and deveined shrimp. Cook until the shrimp change color indicating they are done, about five minutes.
Cut the 8 oz of feta into half inch pieces.
Stir in the cheese to the sauce and let it simmer for another five minutes.
