The Third Man: Applesauce with Horseradish

Introduction
This applesauce gets its zip from white horseradish. It is a traditional side dish for Tafelspitz.
Ingredients
- 2 tart Apples (Granny Smiths work well)
- 2 T Sugar
- 1 T Prepared White Horseradish
- 1 T Olive Oil
Directions
This is a steamer insert. it turns virtually any pan into a steamer. Put the steamer into the pan.
Add enough water so you see water just about touching the bottom holes. Cover the pot and bring the water to a boil.
Peel 2 tart apples. Core them.
Cut the pieces into 1 to 2 inch pieces. This will help them cook faster.
Open the pot, put in the apples, and reduce the heat so that the steam still rises, but not at a full-tilt boil. Cover the pot and let the apples steam until soft - about 10 minutes.
While the apples are steaming put the following into the food processor:
- 2 T Sugar
- 1 T Prepared White Horseradish
Now add 1 T of Olive Oil.
Add all the apple to the processor. Process, pulsing the blade until you've reached the desired, apple-saucey consistency.
Pour the applesauce into a bowl
