Doctor Zhivago: Cucumber Dill Salad
This traditional Russian salad works great with fish. It only takes a few minutes to make, but works best when made an hour or two in advance.
- 1 cucumber
- 1/3 cup sour cream
- 4 - 6 sprigs of dill
- 2-3 scallions
Clean and chop the dill, discarding the stems. Combine the dill with the sour cream.
Clean and chop two or three scallions and add them to the sour cream/dill dressing.
Wash the cucumber. Slice it into coins as thin as possible.
Combine the cucumber with the sour cream-dill dressing. Salt and pepper to taste. Chill covered for an hour before serving.
